This week is the 'Festival of Lamb', part of The Bendigo Sheep and Wool Show. In recognition Bouchon will be highlighting locally produced Lyndale Park Organic Texel Lamb as an Assiette for two people to share, utilising the whole animal from nose to tail.

Crumbed lambs brains with sauce gribiche and petit salad
Sautéed sweetbreads with shallot and broadbeans jus gras
Braised shoulder wrapped in Brik pastry with flageolet beans, peppers and lamb jus
